Garlic Brinjal Curry





This tasty Brinjal Curry is my mother-in-law's recipe. I liked it very much. The special thing about this curry is, the entire curry is prepared only with Garlic and some spices. So the taste enriches the curry.

Ingredients:
  • Small Brinjals - 10
  • Garlic - 10 pods
  • Roasted Gram / Pottukadalai - 2 tbsp
  • Dry Red chilli - 1 or 2
  • Black Peppercorns - 1 to 2 tsp
  • Cinnamon stick - medium size
  • Small Onions - 10 nos 
  • Curry leaves - 2 sprig
  • Oil - 4 tbsp
  • Mustard - 1/4 tsp
  • Salt as per taste
  • Coriander leaves for Garnishing
Method:

Wash the Brinjal's thoroughly and make slits on 4 sides without cutting entirely. Place it in a bowl of water.

Grind garlic, chilli, pepper, gram dal, cinnamon, curry leaf in a mixer to a smooth paste. Add some water while grinding.

  • Cut the onions horizontally in circular shape. In a Kuzhambu Pan add oil, mustard, onions and curry leaves. Saute well for a minute.
  • Add the grounded spice mixture and saute for few mins until raw smell leaves.
  • Add the Brinjals and saute till all the spice gets nicely coated with the Brinjals.
  • Add water and Cook until Brinjals are soft. stir ocassionally.
  • While cooking you can smell the nice aroma of Garlic. 
  • Finally Garnish with fresh Coriander leaves.


Now your tasty garlic brinjal curry is ready and you can serve it with Rice.
