Amla Juice with Herbs



I got fresh gooseberries from our friend's gooseberry tree. There was bunch of gooseberries in every branch of the tree. It was very pleasant to look at those bunches. I picked those gooseberries and made this fresh Amla juice. Those i picked are small ones, so i got some bitter taste. The juice made from big gooseberries are less bitter. 



Amla is healthy and much needed to our body. It is high in antioxidants and Vitamin C. It is considered as one of the immunity boosters and works well in kids. Amla can be consumed in many ways. Here i have given a rare and unique juice recipe which when consumed gives goodness to our body in many aspects and also helps in digestion. Even kids can drink this juice in small quantity, if they liked it. Amla in addiiton with the below mentioned herbs has enormous nutritional benefits when taken by kids. This juice have mild bitter taste. Don't hesitate, Keep in mind We are drinking for our body to keep healthy. Some of my Amla recipes are given below

Ingredients:
  1. Amla/Nellikkai/Gooseberry - 2 large 
  2. Curry leaves - 2 tbsp 
  3. Coriander leaves - 2 tbsp
  4. Mint leaves - 2 tbsp
  5. Tulsi or holy Basil - 1 tbsp
The above mentioned Ingredients serves 2 glasses of Amla Juice




( I had only few Thulasi leaves, so i added in less number)

Method to make Juice:

Add all the Ingredients in a mixie, add enough water and blend as a fine paste


It is filtered using a filter


Add one more glass of water and extract the complete juice of amla and herbs. 

Now amla juice is ready to consume as such or u can add a pinch of salt


Notes:
  • This juice can be consumed in empty stomach to obtain lots of health benefits.
  • This juice can be consumed twice or thrice in a week.
  • As soon as it is prepared it should be consumed.
  • No need to add sugar or Honey. It should be consumed as it is to get entire nutrition of these herbs.
  • If you have any particular disease or stomach problems please do avoid this juice.

Gooseberry Sweet Balls



These sweet balls are especially made for children who dislike gooseberries. By giving this to our kids from their childhood days, they will be having good immunity power over diseases. Gooseberries are abundant in Vitamin C and helps in boosting immunity in children.

Ingredients:
  1. Gooseberry - 3 to 4
  2. karuppati / Jaggery - 1/2 cup
  3. Ghee - 1 tbsp
  4. cardamom powder - 1//4 tsp

Cooking Method:

Cook gooseberries are cooked in water or can be steam cooked

Gooseberries are cutted into pieces
Cutted pieces are added in mixie and grinded into coarse paste
In a pan add karupatti and 2 tbsp of water and let it boil for few seconds( This step is just to filter the impurities found in Jaggery)


Filter the dust using a filter and again add the jaggery water in the pan


Add the coarsely grounded gooseberry and let it cook


Now the gooseberry absorbs all the jaggery water and becomes thick in consistency. Now add cardamom powder. 


Finally add ghee and switch off the stove.


It is now ready to make balls out of this gooseberry. Store in air tight container. It holds good for about a week in normal temperature upon careful handling.

Idly Podi/Idli Milagai Podi Recipe



Ingredients:

  1. Urad Dal /Ulundu - 1 cup
  2. Chana Dal/ Kadalai paruppu - 3/4 cup
  3. Red chilli - 3/4 cup
  4. Groundnut - 1 tbsp
  5. Sesame Seeds/Ellu - 1 tbsp
  6. Hing - small piece / 1/4 tsp
  7. Curry leaves - 2 sprig only
  8. Salt - 1 to 2 tsp (or) as per needed
  9. Kollu / Kulthi Dal - 1tbsp (optional)



Method:

Dry Roast everything seperately until golden brown in medium flame

First Dry Roast Red Chilli in low flame for about a minute. It changes its colour.
Transfer it into a plate.

Then dry roast chana Dal forabout 3 minutes in medium low flame. A nice aroma will come on continuous roasting. transfer to a plate


Then dry roast Urad Dal for about 3 minutes. It changes ints colour with a nice aroma. transfer to a plate

Next groundnut. roast it for few second as it is already roasted groundnut only.

Next sesame seeds are roasted till it splutters and the colour is also changed.

Curry leaves are washed thoroughly and then roast it till it becomes dry and can be crushed.



The salt is also roasted to remove the moisture in it. I used Rock salt.

Finally Hing is roasted. I used solid asafoetida. You can use Powdered Hing also.

After it gets cooled, add in mixie and grind to a coarse powder. 
Store it in an air tight Container.

Lunchbox Recipe 16 - Snakeguard Rice


Snakeguard  healthy fibrous vegetable. It is good to add it in our Lunch routine. Here I have given a tastier nutritious lunchbox rice made with snakeguard and chana dal. It is more tasty with a papad or Vadam.

Snakeguard Curry Recipe







Snake gourd is one of the vegetables that is widely used in South Indian cooking. Snake gourd vegetable is believed to have a cooling effect on the body and is high in water content. So if you want to loose your weight, you can take snakegourd, ridgegourd, bottlegourd, bittergourd dishes often and these vegetables has highly rich in fibre content. 

Here in this recipe I have included more Chana dal that is cooked with Snakegourd to make the dish tastier and nutritious. Chana dal is easily digestible and rich in proteins. Lets move on to the recipe for easy snake gourd chana dal curry.

Ingredients:
  1. Medium size snakgourd - 1
  2. Chana Dal - 4 tbsp
  3. Onion - no
  4. Tomato - 1 small size
  5. Green Chilli - 1 no
  6. Homemade Sambar powder - 1 tsp
  7. Mustard - 1/4 tsp
  8. Split Urad Dal - 1 tsp
  9. Grated Coconut - 2 tbsp
  10. Curry leaves - 1 sprig
  11. Coriander leaves
  12. Cooking Oil - 1 tbsp
  13. Salt as per taste
Cooking Method:
  • Scrap the outer layer skin of snakegourd with a knife. 
  • Cut into 2 or 3 pieces.
  • Remove the seeds inside it and wash thoroughly.

Cut the vegetable into small cubes.


  • In a pan add oil followed by mustard, urad dal, curry leaves.
  • Next add Onion then Tomato. 
  • Saute until tomato becomes soft. 
  • Now add cubed snake gourd and saute till raw smell leaves.
  • After some time add sambar powder, Turmeric powder and again saute it for few seconds.
  • Now add water and cook for about 2 mins depends on your quantity. 
  • Since we have sauted for some time, at that time itself it was half cooked. 
  • So don't overcook. 


  • Simultaneously cook chana dal separately in a cooker. 
  • Add cooked chana Dal along with the cooked snake gourd. 
  • At this time add salt. 
  • Close the lid and cook for about 2 mins.

  • Finally add grated coconut and garnish with coriander leaves.
  • Now our snakegourd curry is ready to have it with plain rice. 
  • since we have added more chana Dal the taste will be more when eaten with white rice.

For Making Snakeguard Rice
  • In a pan add cooked plain white rice and cooked snake gourd curry. 
  • The white rice must be cooled before adding it to the curry. 
  • If it is added hot, the rice will be mashed with the curry and the taste differs.
  • Mix it gently with spoon. Season with Coconut Oil.

Now our Snakegourd Rice is ready to serve for Lunch

Children Lunch Box Idea 14 - Chana Masala Rice



Chana Masala rice is one of the spicier version of chana Biryani. But when paired with Raita it comes with an excellent flavour and taste. For packing lunchbox, the chana has to be soaked before night itself, so that it will be ready for cooking in the morning. You can prepare only the Masala and can be packed separately along with White Rice or can be sent as a side dish for Chapati.
