Ulundhu Kali / Blackgram Porridge

Starting the year 2018 with Healthy Sweet Recipe !!!

An Authentic and Traditional dish of South India !!!





Ulundhu kali is south Indian delight and also a traditional dish which is high in protein,low in fat and very good for women which helps to strengthen hip bones. One of the most healthy dishes given especially to girls. Especially when a girl reaches her puberty age, this is one such nutritional rich laddo that will be tasty as well as so healthy that gives her enough strength to manage her rest of her days especially during the period days as well as during pregnancy.

People usually make this with black urad dal with skin and palm jaggery(Karupatti in tamil) as it is supposed to be more healthy.Urad dal helps to strengthen the bones. Apart from this, urad dal has lots of other health benefits too. So its better to have urad dal in our regular diet to avoid all these problems. Apart from eating idli/dosa and vada, I feel this is also a good choice of including urad dal in our daily diet.. 

This dish is purely my sister's dish. She cooked and I clicked. My Sister added some more special ingredients for this dish other than normal Ulundhu kali to make it more tastier, that anybody can eat without any hesitation. She has also added nutrient rich rice grains along with normal raw rice to make ulundhu kali more nutritious porridge. Now lets see how to make this ulundu kali/Urad dal Porridge.

Ingredients:

To make Ulundhu Kali Powder:
  1. Whole Blackgram - 1 cup
  2. Raw rice - 1/4 cup
  3. Red Rice - 1/4 cup
  4. Moongil Rice = 1/4 cup
  5. Brown rice/Kaikuthal arisi - 1/4 cup 
 Blackgram 1 cup : All the Rice combined 1 cup 
 1:1 Ratio

To make Ulundhu Kali :
  1. Gingelly Oil - 4 tbsp
  2. Groundnut - 2 tbsp
  3. Grated Coconut - 2 tbsp
  4. Karupatti - 4 tbsp
  5. Ghee - 2 tbsp
  6. Cardamom Powder - 1 tsp
  7. Water - 2 cups (can be increased while cooking)



Cooking Method:

Karupatti has to be soaked in 2 cups of water for about 10 mins before starting to make kali. Karupatti water has to be filtered before adding the ulundhu powder, since it has any dust particles.

To make Ulundhu Kali Powder : 
  • In a frying pan simply add the whole blackgram and dry roast till nice aroma comes, in a medium or low flame. Keep it aside.
  • In the same pan add all the rice together and roast for a minute in a low flame.
  • Add it to a mixer grinder and powder it.

  • Add the Ulundhu kali powder to the karupatti water and stir slowly without forming any lumps. Keep it aside.
  • In a pan add gingelly oil, 1 tbsp of ghee, then broken groundnut. Roast groundnut in the oil.

  • Add the karupatti water and ulundhu kali mixture in the pan slowly and stir well.
  • Cook the mixture for about 10 mins in a medium flame without forming any lumps. It thickens. 
  • If you feel it is still has to be cooked, add some more water and cook well till raw smell leaves.
  • Now it gets cooked well and thicken. It attains kali stage. It must not stick to out fingers. Check it. 
  • Now add the grated coconut and a 1 tbsp of ghee and sprinkle some cardamom powder and stir well. 
  • Switch off the flame. Serve Hot.


Now our delicious, nutrient rich healthy porridge is ready to serve. 


Notes:
  • You can add some more gingelly oil and ghee as per your need. 
  • Karupatti can also be increased or decreased according to your taste buds.
  • Ulundhu kali powder can be made in large quantity in batches and stored for months in refrigerator.
  • Whole blackgram is nutrient rich rather than broken blackgram. So pls try to use whole blackgram.
  • You can even make small balls of this ulundhu kali, so that children can eat it easily.
