Homemade Soup Masala Powder Recipe



I wish to share this precious recipe with you all since I got this recipe from my grand mother's age Old recipe book which my Mom had with her. Wow what a hand writing ... Its like a printed page ... Though the pages were tared here and there, somehow I could collect few pages. 
    As soon as I got this recipe, I tried Mutton soup ... Fantastic taste with aromatic spices blended with homely flavour. This soup recipe is mentioned to prepare only Non - Veg soup. So I tried only with Chicken and Mutton ... It was really good. I didn't get the correct measurements, still I prepared this soup Masala powder with some approximate units with the help of my Mom. If you find anything to be included or excluded please do. The below said Ingredients quantity turned out with nice flavour in my soup preparation. 
The given Ingredients measurements are approximate Only. Alter according to your needs. 

Ingredients:
  1. Coriander seeds - 1 cup
  2. Jeera / Cumin - 2 tbsp
  3. Black Pepper - 2 tbsp
  4. Fennel Seeds - 1 tbsp
  5. Red Chilli - 10 nos (according to size) 
  6. Clove - 6 nos 
  7. Cardamom - 4 or 5 nos 
  8. Cinnamon - 2 to 4 sticks
  9. Methi seeds - 1 tsp
  10. Poppy seeds - 1 tbsp
  11. Rice - 1 tbsp
  12. Mace / Jathibathri - 1 spear 
  13. Marati Moggu - 2 nos
  14. Stone Flower / Kalpasi - 4 nos
  15. Nutmeg / jadikai - quarter or half
  16. Bay Leaf - 2 nos
  17. Curry leaves - 4 sprig

Directions to make Soup Masala Powder:

Collect all the Ingredients. First dry roast cinnamon, clove, cardamom, star anise, stone flower, Mace, Marati Moggu, Nutmeg, Bay Leaf separately in a medium flame. Keep it side.

Then dry roast coariander seeds, cumin, fennel, methi, rice, poppy, dry chilli, curry leaves, pepper etc over medium flame with constant stirring to ensure even roasting. Keep it aside.


In a mixer grind the spices which are first roasted and kept. It would have cooled right now. Then followed by next batch of roasted spices. Grind everything to a fine powder and store in an air tight container jar.




I made Mutton soup using this soup Masala powder... Was sooooo Delicious !!!


Notes :

You can increase or decrease the aromatic spices according to your flavour.

Village Style True Country Chicken Soup / True Nattu Kozhi Rasam



This Soup Recipe is really prepared in Villages from Olden days Onwards... Once we went to our distance relation grand ma's home...Though they are living in Remote areas, we used to visit their home rarely... Grandma served a nice breakfast and started to prepared Lunch... I helped her. She Cooked Country Chicken Recipes specially for us.. She prepared Nattu Kozhi Soup and Nattu Kozhi Varuval...Wow!! Hats off to grandma really mouth watering !! I had a very good chance of watching that soup preparation...I tried in home...It came out well as she prepared. Everybody in our Home enjoyed it...It was really a special Sunday for us. I would love to Share it with U all friends..

Health Benefits of Chicken Bones: 

Chicken Bones contains high nutritional value fighting against the cold causing virus. Also include building immunity, repairing wounds and helping digestion.

Ingredients:
  1. Chicken pieces with Bones / Bone Part - 200 gms
  2. Turmeric - 1 tsp
  3. Cardamom - 1
  4. Clove - 1 
  5. Cinnamon stick - 1/2 inch
  6. Garam Masala - 1 tsp
  7. Curry leaves
  8. Coriander leaves
  9. Oil - 2 tsp
  10. Salt as per taste
To Roast and Grind:
  1. Coriander Seeds - 1 tbsp
  2. Cumin seeds - 1 tbsp
  3. Fennel Seeds - 2 tsp
  4. Whole Black Pepper - 2 tsp
  5. Dried Red Chilli - 2 nos
To Grind:

  1. Small Onions - 6 nos 
  2. Sour Tomato - 1 Big size
  3. Garlic Pods - 4 nos
  4. Curry leaves - 1 sprig
Chicken Bones/Bone Marrow have the unique feature of soothing cold diseases. So Bone marrows or Bone part, legs part anything you may use.

Cooking Method:

Roast the Ingredients listed under 'Roast n Grind' in simmer..Be careful do not let it burnt...A nice aroma comes. After it gets cooled down grind it in a mixer to a powdered texture. transfer it to a separate plate.

Now grind onion, tomato, garlic and curry leaves. You can add more tomatoes according to your sourness. 

  • Wash thoroughly the chicken bone pieces with turmeric water. In a pressure cooker add oil, clove, cinnamon, cardamom. 
  • After that add the grounded onion masala, turmeric and saute nicely till raw smell leaves.
  • Now add the grouded spice powder, mix well. Add chicken pieces and saute for 2 mins in a medium flame. 
  • Add water and salt and close the lid. Wait for 5 whistles. 
  • Open the pan add Garam Masala and let it boil for 5 mins. Add more water and boil.
  • Check for salt and finally Garnish with Coriander leaves.


It can also be taken as Nattu Kozhi Rasam for rice. It will be a different taste compared to normal tomato rasam...





Notes :

  • If you don't have sour tomatoes add more tomatoes for tangy taste.
  • Do not use Coriander, cumin, fennel and pepper powders. Use only whole seeds.
  • Do not use garlic paste. Use only Fresh Garlic Pods.
  • You may also prepare this soup in normal Chicken.
