Horsegram / Kollu / Kulthi Dal Dosa Recipe

Horse gram is the most protein-rich lentil found on the planet. It is very high-powered. That’s why race horses are fed with this gram, which is called horse gram in the market.



Have heard of Kollu Paruppu, Kollu Kuzhambu, Kollu sundal and other recipes, its somewhat strange hearing Kollu Dosa Recipe ..... Yes for me too before preparing this Dosa ... We can make even Dosas using this Kulthi Dhal :). Children refuse to have Horse gram in any form, If we make Dosas in this Kulthi Dhal, they could not find whats inside in it and simply have it as plain dosas, However we need to include almost all the pulses in our regular food routine and provide healthy recipes to our family and kids, we are in a position to include Horse gram also as it is a very healthy Pulse.  

This is a simple and easy Dosa recipe. Those who want to taste variety of dosa recipes this recipe will be a good choice to include in the Breakfast or Dinner Menu. As soon as the batter is prepared you can make dosas, no need for overnight fermentation. This Dosa tastes good with any spicy chutney - flavoured Tomato Chutney or simply coconut chutney.

High in iron, calcium, and protein. In fact, horse gram has the highest calcium content among pulses and is one of the richest vegetarian sources of protein

Ingredients:
  1. Idly Rice - 1 Cup
  2. Horsegram / Kollu / Kulthi Dal - 1/2 Cup
  3. Fermented Idly Dosa Batter - 1/2 Cup
  4. Cumin / Jeera - 2 tsp
  5. Dry Red Chilli - 4 nos
  6. Hing / Asafoetida - 1/4 tsp
  7. Curry Leaves - 2 sprig
  8. Salt as per taste
  9. Cooking Oil as required
Cooking Method:

Soak Rice and Horse gram for about 3 to 4 hrs. In a mixer grinder add Jeera, curry leaves, red chilli, Hing, salt together and grind until it becomes like a fine powder.

Add the soaked rice and Horse gram along with the powder and grind like a dosa batter. 


Then add this batter to Idly Dosa Batter and mix well. As soon as this is done you can spread the dosa on a dosa pan and drizzle oil. It takes some time to cook. Let it cook in a medium flame. You can add some chopped Onions on these Dosas. Flip to other side. 



 Serve Hot Immediately. when it becomes cool, it is somewhat hard to eat. so be quick :) :).





Notes:

You can even sprout the Horse gram and then follow the above step to make sprouted Horse gram Dosa. It is a Complete Protein Rich Dosa.

Yummy Veggie Omelette / Besan Cheela Recipe



This Veggie Omelette is our all time favourite whenever we visit any restaurant. Every time when I order for this Veg Omelette, I think of still I haven't posted this yummy recipe in my Article. So last time when I had this Veggie Omelette in our regular restaurant, I have decided to Post this recipe as soon as possible and now I am here to share with you.

Ingredients:
  1. Besan / Gram flour - 1 Cup
  2. Wheat Flour - 1/4 cup
  3. Curd - 2 tsp 
  4. Butter - 1 tsp (optional) 
  5. Carrot grated - 1 tbsp
  6. Beans finely Chopped - 1 tbsp
  7. Cabbage - 1 tbsp
  8. Capsicum - 1 tbsp
  9. Big Onion - 1 tbsp
  10. Tomato finely Chopped - 1 tbsp
  11. Green Chilly - 2 nos
  12. Pepper coarsely grounded - 2 tsp
  13. Chilly Powder - 2 tsp
  14. Cumin Powder - 1 tsp
  15. Turmeric Powder - 2 tsp
  16. Hing - 1 pinch
  17. Curry Leaves - 1 sprig
  18. Coriander Leaves as needed
  19. Water - 1/2 Cup approx
  20. Salt as per taste
Take a bowl add curd, water, chilly powder, cumin powder, turmeric powder, Hing, butter, besan and wheat flour. Mix everything well without forming any lumps. 
Then add all the Veggies, onion, tomato, curry n coriander leaves to this mixture and mix well with laddle. 
The Batter consistency should be slightly thick enough to make these veg omelette. 
Finally add salt and check the salt content before you pour in the Dosa pan. As soon as you prepared the batter you can make Omelette. No need to wait.

Now spread this veg omelette batter in dosa pan slowly like an omelette. The flame should be simmer. After spreading batter sprinkle the Coarsely ground pepper powder on it and drizzle oil over it. Then increase the flame to medium. Flip the Omelette to other side and cook patiently. It takes some more time to cook. 



Now your yummy Veggie Omelette is ready n you can have it such or with Coconut chutney which goes well with this Veggie Omelette.

Notes:

The batter should not be thin. If it is thin the besan will not be cooked and it will be sticky. So be careful at this Point of making the batter. 
It must not be too thick also, as the omelette will be hard and the omelette may differ in taste.
The Vegetables added is purely depends on your choice. Do not dump with more Vegetables.

Easy N Tasty Mint Dosa Recipe




This Mint Dosa recipe I got from our neighbour who is running a shop of grinding Idly Dosa Batter and selling to hotels. They are preparing this batter everyday and the demand of supply for this Mint dosa batter is in high peak. So I tried this recipe once and it was too good . I have included some more Ingredients to this Mint Dosa batter to make it more tastier and flavourful. Let me share this tasty Yummy Mint Dosa Recipe for U all.

Ingredients:
  1. Idly / Dosa Batter - 1/2 kg Batter
  2. Mint Leaves - Fistful approximately
  3. Coriander leaves - 2 tbsp 
  4. Green Chilly - 4 nos
  5. Ginger Chopped - 2 tbsp
  6. Coconut grated - 1 tbsp (optional)
  7. Big Onion Chopped finely
  8. Salt as per taste
Directions to make Mint Dosa:
  1. Be ready with the Ingredients. 
  2. Add mint leaves, coriander leaves, ginger, coconut and green chilly into a mixer grinder and grind it to a fine paste by adding some water. Do not add more water.
  3. Add this paste to the Dosa Batter and stir well so that it combines nicely with the Dosa Batter. The consistency should be correct as normal Dosa Batter after mixing the mint paste. 
  4. You can make Dosa now itslef as soon as you mixed this paste. 
  5. Pour a laddle full of batter on the Dosa pan and spread it gently. You can add some chopped onion on the dosa and sprinkle some oil over it.
  6. Flip it to the other side softly. Wait until it becomes crispy.

Now a green colourful and healthy Dosa is ready and you can serve hot with coconut chutney or any other chutneys of your choice.



Notes:
  1. For this mint dosa recipe everything you grind should be raw. No need to saute in oil. 
  2. Coconut is just for flavour. You can make this Dosa without coconut also.
  3. As soon as you mix the mint paste, within a day try to finish the batter. If it is refrigerated for the next day the flavour may change and the nice green colour is lost.

Sprouted Pesarattu






We are all familiar with the recipe Andra Pesarattu. Its a healthy dish and tastier too. A healthy diet plan is incomplete without the inclusion of sprouts into it. So I have prepared this Pesarattu little more healthier by making use of sprouted green gram.

Health Benefits:

The health benefits of eating sprouts are numerous as they are a rich source of protein, anti-oxidants and other vitamins. Sprouts are wonder food due to its high nutritional value. Natural sprouts are good for a healthy body and mind development. It ensures blood purification and strengthens the immune system. 
Ingredients:
  • Green gram - 1 cup
  • Soaked Rice - 2 tbsp
  • Ginger chopped- 1 tbsp 
  • Jeera / Cumin - 2 tsp
  • Green Chillies - 2
  • Curry leaves - 1 sprig
  • Salt as per taste
Method:
Sprouting method of Green Gram:
Soak green gram for atleast 8 hours(I am not sure about the soaking time. I soaked for 8 hours). Drain the water completely. Take a closed Pan and place a white cloth in it, put the soaked green gram in to it and close the lid of the vessel( I used hot box). Let it be closed for overnight. In the morning when u see the sprouts appeared in the green gram).

Add the sprouted green gram to a mixer grinder along with ginger, green chilli, jeera, curry leaves, salt and soaked rice. Grind to a smooth paste. You can add little water. It should be in Ordinary Dosa batter consistency.



Take a Dosa Pan. Sprinkle some oil to it and slowly spread the batter. Add finely chopped Onions on the Dosas and add some oil. Turn over to the other side. It may break while flipping. Be careful. Cook in medium flame. It may take some more time compared to normal rice dosas.



Now your tasty and healthy sprouted green gram dosa is ready. Serve hot with Ginger Chutney or coconut Chutney.

Easy Onion Wheat Roti


When you get bored of eating chappathi, here is a tasty and healthy moreover an easy recipe to prepare for dinner. An easy thing is, we no need to prepare Chutneys for these Rotis. 

Ingredients:
  • Wheat flour - 2 cups
  • Onion - 1 large
  • Green / Red Chilli - 2 nos
  • Curry leaves - 1 sprig
  • Coriander leaves - 
  • Oil - 1 tbsp
  • Salt as per taste
Method:
  • Take wheat flour in a bowl.
  • Add water and  salt to make a batter, stir well with your hands so that no lumps are formed. 
  • Add some more water if needed. 
  • The Roti Batter should be thick in consistency and not like regular Dosa batter.
  • Cut the onion breadthwise and it should be thick. 
  • Add Onion, Chilli, Curry and Corainder leaves. 
  • Stir well with your hands or laddle.
  • Keep it for half an hour or if you are in a hurry that your child and hubby are waiting, you can prepare Rotis as soon as you prepare the Roti batter.
  • Spread the Rotis with your hands and pour a spoonful of oil. More Oil gives a great taste.
  • Cook in medium low flame. It takes time to get cooked. So be patient.
  • Flip to the other side. Slightly increase the flame and cook for some more time. 
  • Flip to the other side. (Do this this for 2 to 3 times)
  • Finally it will be in Light brown Colour. 
  • And now your tasty Wheat Roti is ready to have as it is.

Easy Red Jowar / Cholam / Sorghum Dosa






This recipe is purely mine. Because whenever I feel lazy to grind this Cholam Dosa seperately, I will go for this shortcut method. However we have to take healthier food for our day today life. Grains play an important role. So eat healthy food in easier way.

Ingredients:
  • Red Cholam/Jowar - 1 cup
  • Fermented Idly  Batter - 1 cup
  • Salt as per taste
  • Water required quantity
Method:
  • Soak Jowar for atleast 3 hours. Grind it in a mixer grinder (I prefer mixer grinder, as it is an easy recipe, let's grind in easier way) adding water in small quanities . 
  • Add this cholam batter to already fermented Idly batter. Stir well with a laddle.
  • Keep closed for one hour or less.
  • If the Batter is thick u can add some more water. The consistency should be a normal Dosa Batter.
  • Spread dosa batter on a dosa pan. Cook in medium flame. Spread oil turn to the other side.
  • You can even add cutted onions spread over the dosa.


Easy and healthier Red Cholam Dosa is now ready and it goes well with Coconut chutney and Onion chutney.


Notes :
  • If red cholam is not available, u can go for normal white cholam.
  • This method can be followed for Kambu / Bhajara Dosa preparation.

Bengaluru Special Kara Dosai Recipe


This is my Akka's recipe. Whenever I visit her home she prepare this Dosa for me. It is very simple, as soon as you grind it, you can make dosas, no need to keep overnight for fermentation. So I adopted this recipe from her. Usually I prepare these dosas for dinner.

Ingredients:
  1. Idly Rice - 2 cups
  2. Toor Dhal - 1 cup
  3. Big onion - 1 medium size
  4. Turmeric - 1 tsp
  5. Grated Coconut - 1/4 cup or less as per your taste
  6. Hing/Asafoetida - 1/4 tsp
  7. Coriander Leaves
  8. Salt as per your taste
To Grind:
  1. Small onion - 10 nos
  2. Dry red chilly - 4 nos
  3. Curry leaves -  2 sprig
  4. Cumin/Jeera - 1 tbsp
Preparation:

First soak rice and dhal for about 4 hours.

Grind the Ingredients listed under to grind (cut the onions and red chillies into small pieces, add jeera and curry leaves and then grind else it won't be grinded in Grinder). Grind them first to a smooth paste and then add rice and dhal. Grind them for 15 minutes.


Now the Batter is ready.  The batter should not be too thick, if it so you may not get the crispy Dosa. So add some more water to the batter if the batter is thick. Mix big onion, coconut, turmeric, Hing, coriander leaves along with the batter.


Pour a ladle full of batter in Dosa Pan. Slowly spread the batter. It will not be thin like Ordinary Dosa. Flip it to other side. It takes little more time to be cooked. Cook in medium high flame. 


Tasty Kara Dosai is now Ready. Have it with coconut Chutney or you can simply have it without any of the chutneys. I usually have this as it is without chutney.
