Paneer and sweet corns are favourite for Vyshu... (For Everybody too..) So thought of doing a snack recipe for her. It came out well. As soon as she came from school in the evening she tasted it with Tomato Ketchup... She admired it and enjoyed eating those balls and almost completed all the balls leaving one or two for her dad... No more balls remaining for me... :( I think kids love it very much. Let me share this yummy snack recipe with U all.
Ingredients:
- Paneer / Cottage Cheese - 200gms
- Sweet Corn kernals - 1/2 to 1 cup
- Green Chilli - 1
- Grated Ginger - 2 tsp
- Bread Crumbs - 1 cup
- Pepper powder - 2 tsp
- Coriander leaves - 1 tbsp
- Corn Flour - 2 tbsp
- Salt as per taste
- Oil for Frying
First remove the corn kernels from the Sweet Corn cob... Or if you are using ready made kernels just skip on to the next step... escaping from this messy work :).
Cook the Kernels for about 10 to 15 minutes in a medium flame and keep it aside.

Grate Paneer and keep it aside.
Be Ready with the Ingredients. You may use red Chilli powder instead of green chillies ... Children won't get disturbed of these Green Chillies..
Grind the sweet corn kernels in a mixer. Take a wide bowl add Paneer, grounded kernels, grated ginger, coriander leaves, pepper powder, salt and 2 tsp corn flour. Mix well with a spoon.
- Take a cup add remaining corn flour, pepper powder, salt, 1 tbsp water and mix well. Make a diluted paste.(paste must be thin and not thick)
- Make small balls and dip the balls in the diluted paste coat it completely and immediately put in to the bread crumbs and softly roll around. (Do not make large balls)
- Let the balls almost covered with the bread crumbs. Make all the balls like this and keep it separately.
- Take a pan of Oil and fry these balls to golden brown in a medium flame.
- Fry nicely else the inner part will not be cooked.
- Do not open the balls as soon as it is made. Let it rest for some time and have it with Tomato Sauce.
