Beetroot Peanut Salad




Beetroot salad is my Mom's recipe which she prepares for us from the childhood days onwards. From those days it is one of my favourite salads with a nice flavour of ginger and lemon juice. The crunchiness of raw peanut and coconut pulls us to fill the entire stomach with only the salad.

Antioxidants are essential to support the immune system. Colourful fruits and vegetables are said to contain antioxidant properties, beetroot being red in colour contains beta cyanine, a very good antioxidant and can reduce LDL, also known as bad cholesterol.

Ingredients:
  • Grated Beetroot - 1 cup
  • soaked Peanuts - 1/2 cup
  • Coconut cut into small pieces - 1/4 cup
  • Grated ginger - 2 tsp
  • Lemon juice - 1 tbsp
  • Pepper - 1/2 tsp
  • Salt as per taste
  • Olive Oil - 2 tsp
  • Urad Dhal - 1tsp
  • Channa Dhal - 1 tsp
  • Coriander leaves
  • Curry Leaves
Cooking Method:

Get the Ingredients ready in a plate. We have to add immediately one after another.

  • Take a pan add olive oil, mustard. Let the mustard gets spluttered. 
  • Then add urad dhal and channa dhal. Wait till it becomes light brown.
  • Add grated beetroot and then add peanuts. Just give a quick saute.
  • Now add grated ginger and coconut. Also saute it quickly.
  • Switch off the stove add lemon juice, pepper and salt.
  • Finally garnish with coriander and curry leaves. Give a quick saute.
  • This is a complete raw recipe. You should not cook anything in it. Every thing is raw only and we are just tempering and seasoning the salad.


Now your tasty and healthy Beetroot salad is ready. Serve cold to experience the real taste and flavour.
