Gulab Phirni / Rice kheer / Arisi Payasam - Easy 3 Step Recipe

This is my First Post so I would like to Post Sweet Recipe Gulab Phirni. 







Phirni a delicious Punjabi style milk and rice based creamy dessert has a thick creamy texture and is traditionally served in clay containers and enjoyed on special occasions. This recipe can be done in 3 easy steps which uses rose water to give a rich flavour and aroma and garnish of sliced almonds and pistachios gives this chilled dessert a tempting look.

Ingredients:
  1. Cooking Rice - 100 gms
  2. Boiled Milk - 500 ml
  3. Condensed Milk - 400 ml or Nestle Milkmaid 400 ml
  4. Rose water - 1 tsp
  5. Cardamom Powder - 1/4 tsp
  6. Almonds, Pistachio, rose petals for Garnishing
  7. Kesar / Saffron for Garnishing
  8. Cashew nuts, Raisins 
  9. Ghee - 2 tbsp
Cooking Method:

Soak rice for about 1/2 an hour and grind as coarse paste without adding water.

  1. Take a heavy bottomed pan add milk and while it gets heating add the rice paste and keep stirring continuously in a medium flame without forming any lumps . It takes about 10 mins to cook the rice in milk. 
  2. Now add the condensed milk. I added Nestle Milkmaid. Keep boiling for some minutes. No need of sugar to add, as condensed milk itself sweetened with sugar. 
  3. Add rose water, cardamom powder and stir well till u attain a creamy texture.
  4. Now a delicious Gulab Phirni is ready. Keep refrigerated for about an hour and Garnish with sliced almonds, pistachios, rose petals and serve chilled.

For Rice Kheer / Arisi Payasam skip the step 4. Fry the Cashew nuts and raisins in Ghee and add to the creamy rice, garnish with saffron strands and serve Hot.







Notes:

If you need more sweetened recipe, you can add some more quantity of milkmaid to the rice pudding. 
You can add rose syrup for the rose coloured gulab phirni recipe.
